Is it easier for children to digest fatty meat or lean meat?

The nutritional components of various lean meats are similar and they are generally easier to digest than fatty meats. They contain about 20% protein, 1-15% fat, 1% inorganic salts, and the rest is water. Generally speaking, pork, beef, and lamb contain higher levels of saturated fat, while poultry, chicken, and rabbit meat contain less saturated fat. They also contain a rich supply of inorganic salts, especially iron (in red lean meat), phosphorus, potassium, and sodium, although calcium is relatively low. Lean meats are also a good source of vitamins B1, B2, B12, and PP. Pork contains a high amount of vitamin B1, but it has little vitamin A and almost no vitamin C.
