There are mainly two pasteurization methods for heating goat milk. The first method involves heating the goat milk to 62-65°C and maintaining this temperature for 30 minutes. This method is not commonly used in Guangdong Province, China. It can kill most pathogenic bacteria in the goat milk, with a sterilization efficiency of 97.3%-99.9%, but it will leave some heat-resistant bacteria and spores. Most of these residual bacteria are harmless lactic acid bacteria that are actually beneficial to health. The second method is to heat the goat milk to 75-90°C and maintain this temperature for 15-16 seconds, which has a shorter sterilization time and higher efficiency.
